I have always loved baking…cakes, breads, pies, etc. But it has been a while since I cranked up the oven…so today I decided to tackle a “Fig and Berry Tart”….this recipe came from “The Sweet Life: Desserts from Chanterelle” by Kate Zuckerman. By the way, if you don’t have that cookbook, get it now. It can really elevate your pastry chef skills.
The tart pastry was not that difficult to make but it was somewhat difficult to get the dough cold enough to roll out. That sort of thing is difficult in the heat & humidity of Florida…a well-chilled batch of dough can heat more quickly than expected, even in a well-airconditioned home. But in the end I was victorious.
The berry mixture inside consists of green figs, blackberries and huckleberries, tossed in a bit of sugar and flour. The lattice work is actually a trick I learned from Zuckerman…puff pastry braiuded into a lattice! It worked really well.
